Fried mozzarella in carrozza with truffle mayo

Ingredients
  • 2 pcs mozzarella
  • 8 slices sandwich bread
  • 4 eggs
  • 4 anchovies
  • Breadcrumbs
  • Oil
  • Salt
  • 2 yolks
  • 70gr truffle oil
  • 130 gr peanut oil
  • 1 spoon lemon juice
  • Truffle carpaccio
  • Salt

Preparation of the recipe

Cut the mozzarella into slices and let it rest for one hour to lose some liquids.

Create a sandwich with bread and mozzarella and one anchovy. Cut in the middle.

Dip the sandwich in 4 eggs and then in the breadcrumbs. Repeat twice.

Fry the sandwich until you get a crunchy golden color. Regulate with a little pinch of salt.

For the mayonnaise, whip the egg yolks in a mixer and add the oil slowly; first the truffle oil and then the peanut oil.

When the texture is firm, add the lemon juice. Regulate the salt.
