Ladyfinger and pastry cream

Ingredients
  • 150gr savoiardi
  • 4 egg yolks
  • 100gr sugar
  • 30g flour
  • 1/2 lt milk
  • 2 vanilla beans
  • 20gr dark cocoa powder
  • 50gr dark chocolate chips

Preparation of the recipe

In a steel saucier, warm up the milk and add a couple of vanilla beans in infusion. Bring it to boil.

In a different small pot stir the egg yolks with the sugar using a wooden spoon.

Slowly add the flour while keep on stirring the ingredients to obtain a homogenous cream.

Now it’s time to delicately add the milk, while continuously mixing.

Heat your mixture, over medium heat, while whisking vigorously until it starts to thicken in about 3-4 minutes.

Transfer half of your cream to a bowl and let it cool.

In the other half add the cocoa powder and chocolate chips and whisk until you obtain your delicious chocolate cream.

Now it’s time decorate your savoiardi biscuits with the help of a pastry bag.
