Originally from Northern Italy, Gorgonzola has an ancient history and it has obtained the PDO certification. Its production takes place in Lombardy and Piedmont regions.
Casa Rinaldi’s Gorgonzola is so soft and creamy that it melts in your mouth. It is a morbid, raw cheese with an intense and refined aroma and a blue flavor. The spiciness is more or less marked depending on the variety.
The sweet Gorgonzola has a softer paste with very light blue green veins compared to the spicy gorgonzola (gorgonzola piccante), that has a hard texture with a very evident blue-greenish color; that is because the spicy Gorgonzola has a generally longer seasoning.
