- 300gr cod filets
- Cherry tomato sauce
- 100gr olives
- White flour
- 1 egg
- 2 spoons of breadcrumbs
- 1 garlic clove
- 1 scallion
- 1 chilli pepper
- Extra virgin olive oil
- Salt & Pepper
Wash and cut the cod filet.
In a blender mix together fish, egg, garlic, parsley salt and peppe.
Once you a have a smooth texture, move the content in a bowl.
Create balls the size of a walnut; add some breadcrumbs if the tecture is too smooth.
Bread them in white flour, removing the excess.
Warm a little extra virgin olive oil in a pan and cook the meatballs over medium heat until golden-brown.
When ready put them on kitchen paper.
In another pan, warm up the extra virgin olive oil with scallion garlic and hot pepper. Sauté over medium heat, then add the cherry tomato sauce with some water and the olives.
Cook for 5 minutes.
Serve the meatballs with the sauce.
