Brilliant in color, Casa Rinaldi’s PGI balsamic vinegar of Modena “Il Bianco” is the most important product in the PGI range of products. It is a vinegar aged for over 3 years in oak barrels. This maturation gives it particular aromatic notes, a slight hint of wood and a sweet and balanced flavor. It is also the product with the highest density (1.19).
“Il Bianco” enhances the ingredients it is combined with. It can be used in drops on cheeses such as parmigiano, or to flavor a risotto.
Its sweet and sour taste makes it ideal for flavoring fish, shellfish, roasts and meats.
