Gnocchi au gratin with vegetables

Zutaten
  • 500gr potato gnocchi
  • 250gr grilled vegetables
  • 200gr red cherry tomato sauce
  • 150gr smoked scamorza
  • 100gr Parmigiano Reggiano
  • ½ onion
  • 1 garlic clove
  • Extra virgin olive oil
  • Fresh basil
  • Salt

Vorbereitung des Rezepts

Finely chop the onion and roast in a pan with a drizzle of oil and one garlic clove.

Add the grilled vegetables, the cherry tomato sauce and some fresh basil leaves. Correct salt and cook for 5 minutes.

Meanwhile, cook the gnocchi in salted boiling water for 5 minutes. Drain the gnocchi in the pan with the sauce and mix well. Turn off the heat.

Pour the gnocchi in a baking dish.

Add some smoked scamorza previously cut into cubes.

Add some grated Parmigiano Reggiano.

Brown in the oven at 180° for 10 min.
