Zutaten
- 320gr couscous
- 2 courgettes
- 4 artichokes alla romana
- 12 prawn tails
- Feta cheese
- Fresh basil
- Basil flavored oil
- Extra virgin olive oil
- Salt & pepper
Boil 320gr of water (same weight as the couscous). Pour the hot water in a bowl, add salt, add the couscous and cover it until all the water has been absorbed (approx. 8 min).
Meanwhile clean and cut the courgettes into thin slices.
Clean and cut the prawn tails.
In a pan add a drizzle of olive oil and sauté the zucchini and the prawn tails with some fresh basil leaves.
After a couple of minutes add the artichokes.
Finally, add the couscous and mix everything well for another couple of minutes.
Serve your couscous adding some feta cheese, fresh basil, a drizzle of basil flavored oil and pepper.
