Octopus salad with pesto alla Genovese and potatoes

  • 1kg potatoes
  • 4 small octopuses in jar
  • Pesto alla Genovese
  • Extra virgin olive oil
  • Salt
  • Pepper

Boil the potatoes in salted water for 10 minutes, then peel and dice them into 3cm cubes.

Drain the potatoes and mix them with pesto and half of the octopuses.

Season with salt, oil, and pepper.

Serve the salad on a deep plate, adding the remaining octopuses just before serving.
